Seasonally available as we approach the holidays, these batches of Pleasant Ridge Reserve are aged in our caves for additional months until they have distilled down to a more pronounced and intense version of our flagship cheese. We diligently taste each batch of Pleasant Ridge Reserve multiple times throughout its time in our care to understand where the cheese is in its aging process. Some batches are released younger when we believe they are most balanced and ready to be enjoyed right away. Other batches will be held back until their flavor profiles have concentrated sufficiently. Extra Aged Pleasant Ridge Reserve batches are identified early on for having a harmonious balance of the flavor attributes we evaluate, plus the proper amount of salt that will allow them to be at peak condition when we release them at 15 months old.
While we love the versatility of the younger Pleasant Ridge Reserve, the extra aged batches are best enjoyed on their own, on a cheese plate. Let the complexity of this rare cheese take center stage.

Keep refrigerated at 38–42°F. Bring to room temperature before serving. Pleasant Ridge Reserve can be stored for several weeks but is at its peak within a couple of weeks of its receiving date. Rush Creek Reserve is meant to be enjoyed as a young cheese and should be consumed by the best-by date printed on the label of the wheel.
