The southwestern corner of Wisconsin is known as the Driftless Region because unlike the rest of the state, it wasn’t scraped flat by glaciers and thus isn’t defined by glacial deposits, or drift.  Instead, our countryside is full of rolling hills and valleys that have been formed over thousands of years by rivers and streams.  It’s also home to more cheesemakers than anywhere else in the country, and we are lucky to partner with two of the very best in this box.
